Broccoli, Bacon and Cheddar Cheese Mini Quiche
Quiche, a French dish based on a custard made of eggs, milk and cream baked in a pastry crust. Mini quiche is just the right bite-able size and make a wonderful party dish because they can be made in advance and then simply reheated before serving.

I made 2 types of mini quiche this time: one is with pastry crust which I use the Pate Brisee pastry recipe from Martha Stewart Living Cookbook and another type of quiche is crust-less. As for the custard and fillings, I just make use of what I have in the fridge and ended up with Cheddar Cheese, Bacon, Broccoli and more Cheddar Cheese.


Displaying this delicious Mini Quiche in Pate Brisee crust on my Grandma's Serving Stand which my aunt proudly exclaimed, "This serving stand make the Mini Quiche display looked so beautiful in photo-shoot".

The inside of a Mini Quiche consist of a filling of good grade streaky bacon (where lean meat is more that fats), broccoli, cheddar cheese and custard.

When I mention crust-less, it means there is no pastry at all which mean this is a very fragile quiche which must be handle with care. Only recommended for sit down, full serving dinner. If you let your guest pick up their own quiche, you might ended up with savoury custard pudding by the time your 5th guest ramble through the quiches.


The crust-less quiche is very soft and tasty and especially yummy for those who likes custard a lot.


I will definitely make this again and again for gathering and parties but with different fillings each time.....Happy Weekend!
