The Original Fish & Chips


Fish & Chips


I still remember I made my first fish & chips with coleslaw when I was still in secondary school.....creating a mess in my mom's kitchen and left the mess for her to clean up when she got back from work. You know I will try to cook all sort of things with my sisters but we seldom do the cleaning and got scolded every time she got back from work and saw the mess in the kitchen. Sometimes she will complain to my dad about how tiring it was for her and blah, blah, blah.....the nagging actually got my dad to help us clean up the mess if he got back earlier than my mom.....hahaha......and of course he enjoyed being our food tester or should we say, our DBKL....he was a very easy going person, well-liked and very 'cin cai' about what he eat....so whether our cooking was good or bad, he will eat it all!
Anyway, I started with batter made of plain flour, water & egg and uses regular supermarket's frozen chips. I NEVER use breadcrumb for my fish & chips cause I never like the breaded type of fish & chips.....so not original style. And over the time, I have improved my recipe to mixtures of self-raising flour, water, beer, soda, egg, vinegar and using real potato for the chips instead of the frozen type....it is so much more delicious than frozen fries. And beside the normal cabbage & carrot coleslaw....sometimes I use corn, bean, butterhead, lettuce, tomato, onion, etc as coleslaw or salad.....the list can go on but most important is that the Fish remain the same.....juicy and not over-cooked.......and my darling LOVE it......as the BEST FISH & CHIPS beside the one he tried in a stall cooked by an Englishman many years ago......
